German Chocolate

I feel sorry for the coconut-haters out there, because there is nothing better than German Chocolate ANYTHING. I’ve had German Chocolate brownies, donuts, cinnamon rolls, cheesecake, cakes, cupcakes and pies. Yum! My new Southern Living inspired my take on this classic.

Double German Chocolate Cupcakes

  • Betty Crocker German Chocolate Cake Mix
  • 1/4 cup each powdered sugar and cocoa
  • 1/2 cup flour
  • 4 eggs
  • 1 cup sour cream
  • 2 T cold, brewed coffee
  • pinch of espresso powder
  • 2/3 cup canola oil
  • 1/2 cup mini dark chocolate chips

This is an incredible batter. Silky, dark and rich.

Baking note: my favorite tins have failed me. Not sure if it’s the increase in temp, but the 12 I baked in those didn’t have a nice, cracked dome.

I made the Southern Living Coconut-Pecan Frosting. It came out perfectly: glossy and not too thick. I drizzled dark chocolate ganache on top. Note to self: When you think you’re being all “Jackson Pollack,” put some waxed paper under the rack first. Your kitchen looked like someone performed an autopsy on a chocolate Easter bunny.

The recipe goes best with: “More: RedOne Jimmy Joker Remix” and “OMG” by Usher.
