Vanilla Voodoo

I’m addicted to Pinterest . It’s bookmarking on steroids. I found a wonderful recipe there via Evil Shenanigans that inspired my weekend baking. Vanilla voodoo with a dark surprise! Shhhhhh

Vanilla Voodoo Cupcakes

  • Betty Crocker Vanilla mix
  • 1/2 cup flour
  • 1/4 cup powdered sugar
  • 1 T vanilla bean paste
  • 1/2 cup oil
  • 1 1/4 cup buttermilk
  • 3 eggs

I filled these with the chocolate filling from Evil Shenanigans.

Frosted with my signature cream cheese buttercream (1 cup butter, 8 ounces cream cheese, 2 pounds powdered sugar, 1 T vanilla bean paste, cream.)

Oven note: The lighter pan yielded higher domes than the dark pan. Hmmm. I’m becoming fascinated with the variations of oven temps and tin finishes.

Goes best with: Stevie Wonder “Superstition” and the “Midnight in the Garden of Good and Evil” soundtrack.
